Crying Tiger Steak Ingredients Marinade+Steak - 1 ribeye steak - 1 tbsp oyster sauce - 1 tbsp soy sauce - 1 tbsp fish sauce - 1 tbsp brown sugar - 1 tsp black pepper - 1 tbsp neutral oil Sauce(Nam Jim Jaew) - 1 tbsp toasted rice powder - 2 tbsp palm sugar - 3 tbsp fish sauce - 1 tbsp tamarind paste - 3 tbsp fish sauce - 1 shallot(sliced) - 3 to 4 tbsp cilantro Instructions Marinade+Steak 1. Combine ingredients for marinade and marinate steak for 30 minutes. 2. Sear steak for 2 to 3 minutes on each side until temperature reaches 125°F. 3. Let rest for 10 minutes. Sauce(Nam Jim Jaew) 1. Toast rice in a dry pan until lightly browned and fragrant. 2. Crush the toasted rice in a mortar and pestle and combine it with the rest of the sauce ingredients. Serve the steak with the sauce and a side of cabbage and cucumbers.

Today I have decided to show how to make Esarn Nam Jim Jaew (pronounced as Nam Jim Jao, rhyming with cow!). This sauce is a favourite in the North, originating in the Esarn region. The sauce is called Esarn Sauce like how Cumberland sausage is named after its region of origin. Nam Jim Jaew simply means "Dipping Sauce". It can be eaten with meat and is often paired with rice or sticky rice. People like to eat Nam Jim Jaew in restaurants or at BBQs but it is eaten any time of day and year. Ingredients: 3 Tbsp of Soy Sauce or Fish Sauce 3 Tbsp of Lemon or Lime Juice 1 Tsp of Brown Sugar 1 Tbsp of Ground Chillies 1 Tbsp of Ground Roasted Rice 1 Tbsp of Shallots, Thinly Sliced 1 Tbsp of Spring Onions, Chopped 1 Tbsp of Mint, Chopped If you are you are unsure and would like to try it premade, I sell bottles of Esarn Sauce in my store. Please give it a try :) + To make Toasted Rice Powder, pour in 1/4 cup of rice (Thai Jasmine Rice or Thai Glutinous Rice preferred) into a pan on low heat. Use a wooden spatula to mix it around occasionally. The goal is to get deep golden/amber colored toasted rice. When the rice has reached this color throughout, you can turn the heat off and let the rice cool off. Once the toasted rice has cooled off, place the it into a blender or spice grinder, and blitz into a coarse powder. Nam Jim Jeaw is a spicy dipping sauce that we often serve with grilled meats. The main ingredients are dried hot chilies, toasted and ground rice, fish sauce, sugar, and fresh lime juice, and it is quite easy to whip some up. Dried chili dipping sauce is always served on the side with Gai Yang (ไก่ย่าง), our traditional recipe for barbecued chicken that is marinated in a flavorful Thai sauce and then grilled over wood coals. You can prepare this dipping sauce recipe to serve on the side with western style grilled meats. Use it to add a Thailand style fusion of flavors to beef steak. It's terrific. Ingredient List: 3 Tablespoons Fish Sauce 3 Tablespoons Lime (fresh squeezed lime juice) 2 teaspoons Sugar 2 teaspoons Sun Dried Thai Hot Chili (roughly ground or pounded into flakes) 2 teaspoons Toasted Ground White Rice 1 Tablespoon Coriander / Cilantro Leaves Directions: 1: Combine the fish sauce, fresh lime juice, sugar, toasted ground rice, and dried chili flakes. Stir well until the sugar dissolves. 2: Add cut cilantro leaves and stir in well. Let stand for 15 minutes before serving, then stir up well and add a few fresh cilantro leaves to the top. NAM JIM JAEW WITH PAN GRILLED LAMB RECIPE By Su’s Cookbook Ingredients: 8-10 small shallots, sliced 1 ½ -2 tbsp palm sugar or granulated sugar 4-5 tbsp thick tamarind juice 4-5 tbsp fish sauce ½ - 1 fresh lime (juice) Handful of coriander leaves, chopped 1 ½ tbsp glutinous rice powder 2-2 ½ heaped tbsp chilli flakes Method: 1. Combine all of the above ingredients into a mixing bowl. Give a quick mix. Taste for seasoning. 2. You may adjust the ingredient amount to your individual taste and preference. 3. You may also add sliced scallion (spring onions). 4. You may either use ordinary rice grains or glutinous rice. (Sticky rice). Toast it lightly before grinding it to a powdered texture. (Use a mortar-pestle or dry mixer) Ingredients to marinate the meat: 1-2 pcs of lamb steak (or your preferred choice of meat) Oyster sauce (1 tbsp for 1 pcs) Brown sugar (1 tbsp for 1 pcs) Coarsely grounded black pepper P/S: Pan or oven grill after 10 minutes. Learn more about the social media giveaways and in store demos happening from Feb 9 to 20, 2022 🤍 Recipe "Crying Tiger Steak" is a traditional Thai recipe of steak slices served with a unique dipping sauce known as Nam Jim Jaew. The toasted rice adds a nutty flavor and texture to the dipping sauce. Sua Rong Hai is Thai name that translates to 'Crying Tiger', and it got this name because the dipping sauce is supposed to be so spicy that it'll make a tiger cry. This is a simple dish that you can prepare for everyday meals or serve at a party. The most popular accompaniment for Crying Tiger Steak is fresh sticky rice. They are so perfect together. Please refer to my previous sticky rice video if you want know how to make it with a rice cooker. Beef Marinade: 2 pcs 8-10 oz Sirloin Steaks, most other cuts of steak are fine. 2 tbsp soy sauce 1 tsp fish sauce 2 tsp sugar 1 tsp ground pepper Dipping Sauce: 2 tbsp fish sauce 1 tbsp palm, brown, or regular sugar 1 tbsp tamarind paste – substitute with lime juice 1 tbsp lime juice 1 tbsp water 1 tbsp toasted rice powder 2 tbsp cilantro – finely chopped 2 tbsp shallots – finely chopped 1 green onion – finely chopped 1-2 tsp chili flakes Toasted rice powder: Toast uncooked sticky/glutinous rice grains for a few minutes until lightly browned, then grind in a food processor or a mortar and pestle. Use the strainer to get rid of the bigger pieces. It adds a smoked nutty flavor and serves to thicken the sauce. They sell this in Asian grocery stores, on Amazon. Making dipping sauce: This sauce is very easy to make. Mix the fish sauce, lime juice, palm sugar, tamarind paste, and chili flakes together and stir well until the sugar dissolves. Adjust to your taste, adding water to dilute it, or more lime juice or fish sauce. Just before you are ready to serve, stir in the toasted rice powder, shallots, cilantro, and green onion. Making crying tiger: Medium-rare is recommended for this dish or when the meat thermometer reads an internal temperature of about 140F, Medium 145F, and medium well 150F 1. Marinade beef/steak: Poke steak with fork and marinate it for 30 minutes to 3 hours. Allow it to sit at room temperature for an hour before cooking. 2. Pan Sear: Heat oil in a skillet over the stove to hot. Pat steaks dry and place skillet and reduce the heat to medium. Cook the steaks to your desired doneness. I cooked it for 3 minutes each side for medium. 3. Air Fryer: Heat air fryer at 390F for 3 minutes. Spray cooking on the rack and pat steaks dry and place on the rack. Air fry at 390F 4 minutes 1st side and 3 minutes on the 2nd side for medium rare. 4. Grill: Heat a grill to 450F. Pat steaks dry and place seasoned steaks on the grill and reduce the heat to medium at 350F. Cook the steaks to your desired doneness. 5. Allow steaks to rest 5-10 minutes to allow steaks to become juicier. Cut into very thin pieces against the grain. 6. Serve with dipping sauce, sticky rice, regular rice, lettuce leaves, cabbage leaves, or cucumber slices. (คอหมูย่าง) In Thai language, "Kor Moo(คอหมู)" means pork neck, "Yang(ย่าง)" means to grill. It's popular in Northeast or Isan restaurants. It’s a tender smoky pork neck with the sour, sweet, salty and spicy dipping sauce “Nam Jim Jaew(แจ่ว)”, and goes well with sticky rice and is perfectly delicious as well. So Yummy. In this recipe, you can make it easily at home. Enjoy. :) This is an #ASMR ver, you can check out the other ver that with BGM and Voices in Chinese if you like: 🤍 - 🇹🇭 How to make Thai Grilled Pork Neck With Spicy Dipping Sauce Recipe Kor Moo Yang With Nam Jim Jaew Recipe ☞ Yielded: 2-3 servings ✎ Ingredients ☞ For marinated pork neck 200~220g palm sugar 1tsp, 7g fish sauce 1tsp, 5g oyster sauce 1tsp, 6g soy sauce 1tsp, 6g ☞ For toasted rice coarse powder raw dry sticky rice 50g can also use jasmine rice In this recipe we only need 13g roasted rice coarse powder, rest can stored for next time ☞ For dipping sauce Fish Sauce 40g, 4 tbsp lim juice 35g, 3 tbsp tamarind puree 30g, 2 tbsp palm sugar 30g, 2 tbsp dried chili flakes 8g, 1.5 tbsp roasted rice coarse powder 13g, 1.5 tbsp red onion Q.S. fresh coriander Q.S. spring onion Q.S. If you don’t have palm sugar, you can use granulated sugar or brown sugar ✎ Instruction ☞ Step 1: Marinade 1. In a small bowl, pour oyster sauce, fish sauce, soy sauce, mix well and then add palm sugar, keep stirring, make sure the sugar is fully dissolved. 2. Use a fork to stab the pork neck with holes evenly across the surface. 3. In a large bowl, put the marinade all over the pork, make sure the pork is totally coated. Let the pork marinate overnight or at least 2 hours in the fridge. This is a easy way to make the marinade, you can use grind the garlic, cilantro roots and peppercorns at first, then add the rest of wet ingredients to mix together, but the Jaew sauce is full of flavor, so the pork doesn't need too much additional seasoned at all. ☞ Step 2: Make the toasted rice coarse powder 1. Place the clean raw sticky rice in a dry pan, fry and toast the rice over medium-low heat, stirring constantly until the rice gets a golden yellow color. 2. Put the rice in a mortar and pestle or food processor to grind  the sticky rice into a coarse powder, with no big grains, but not too fine either. You can put it in the container. ☞ Step 3: Make dipping sauce 1. Slice the red onion, remove the roots of coriander and chop into small pieces, finely chop spring onion. Set aside. 2.  Mix the sauce. In a small bowl, pour fish sauce, lime juice, tamarind puree and palm sugar, mix it until the sugar is fully dissolved. 3. Add the chili flakes and roasted rice powder, stir and mix well. 4. Add all vegetables in, including chopped spring onion, chopped coriander and sliced onion until well combined. Step 4: Grill the pork & serve 1. Grill the pork. ✔ Use the Grill/Griddle First, preheat to high heat on one side grill plate, when hot put down the marinated pork evenly spaced. Grill for 5~6 minutes each side. The grilling time will depend on the thickness and size of meat. ✔ Use the pan Just heat a pan on medium high heat, when the pan is hot enough, place the pork in the pan and cook for 2~3 minutes each side or until slightly charred on the outside. ✔ Use the oven Preheat the oven to 220°C, place the pork on a grilling rack and bake for 25-30 minutes, turning the other side up halfway through. 2. THE dipping sauce that works with all kind of baked, grilled, fried & roasted meat☺️ This is Nam Jim Jaew. The link to my video on How To Make Tamarind Juice ( for cooking ) 👉🏻 🤍 { How To Make Toasted Rice Powder ; Khao Khua } 1) stir fry normal uncook jasmine rice grain in the frying pan until 90% done ( golden brown ) 2) remove from pan and pound in Pestle&Mortar or blend it in the blender. It should result in fine rice powder. You can use it in the soups, like this Tom Zap or Larb Recipes. _ Quantity: Fish sauce - 3 tbsp Lime juice - 1/2 teaspoon Toasted rice powder - 2 tbsp Tamarind juice - 2 tbsp Palm sugar / white sugar syrup - 1 and a half tbsp MSG , optional - 1/4 teaspoon or up to you Chili flakes - 2 tbsp Sliced red shallots - 40g Sliced spring onion - 30g Lukewarm water - 4 tbsp - How To - Combine the seasoning ingredients and combine well. Add the rest of the ingredients except for spring onion, gently combine. Taste test and adjust accordingly. After mixed well, add in spring onion. The base make up of Nam Jim Jaew is Palm sugar, Tamarind puree, Fish sauce and Chilli flake. Lime juice brighten up the sour taste while long coriander and cilantro give the fresh and herbal taste to the sauce. Toasted rice give the grainny texture and delicious nutty and crunchy flavour. The appearance of the sauce is dark brown and a bit thick .
