Tie the intestine to make a sausage. | Small sausage - stuff with meat, some of the stomach, and a smaller intestine. Other organs: liver, heart, and lungs.| Porridge - when all organs are removed, filter the stock and add rice into this stock, then wait until it becomes a porridge. 🇲🇳 THE WHITE BIRD (SHEEP TAIL/BUTT): Trim the fur of the sheep tail. Remove the rest of the hair with a blowtorch. Trim the fat inside to make a sack. Slice meat with some fat. Stuff the meat inside the tail sack and add salt water. Using a huge needle and camel wool, sew the tail. Use a special Mongolian technique to secure the sack. Blowtorch some more. Clean the exterior with boiled water then boil it for hours. Ready to serve. 🇲🇳 SHEEP HEAD BOILED IN STOMACH: Blowtorch sheep head. Scrape the bones to remove the black/burnt layer. Clean sheep's stomach by turning it inside out and scraping it with boiled water. Clean sheep head with boiled water and rub it. Cut the head in a Mongolian traditional way to break the jaw. Stuff the head in the stomach and add salt water. Make sure there is no air inside the stomach. Use camel hair as a string to sew the stomach shut. Close the lid and repeat. Add water & noodles. Close the lid. When the noodles are cooked, add spring onions and mix. Ready to serve 🇲🇳KHORKHOG (SHEEP BBQ IN XOVIET POT): Heat stone. Chop sheep legs and ribs into small pieces. Prepare a cleaned Xoviet pot and make sure the lid is properly tight. Boil together with horse meat & some organs. 🇲🇳CURD SOUP: Use stock soup from white sausages, horse meat, and organ mixture. Add in milk curd. 🇲🇳SHUUZ (SALTY MEAT): Slice horse leg meat. Prepare a hot pan and add oil. Add meat and salt, then fry and mix. Place in a receptacle and close the lid. Stored dry meat in a jar and leave some in the pan to continue to cook Shuuz noodles. 🇲🇳COW MEAT JELLY: Cut cow feet into pieces and boil them for 1.5hrs. Season with black peppers, cumin, salt, bay leaves. Prepare garlic, onions, carrots, and peppers. Add in carrots first and then the other ingredients. After 1.5hrs, remove cow feet and add to a bowl. Separate meat & bones. Chop the meat into small pieces & place it back into the stock. Add in veggies. Pour the entire mixture into a square tray and dress with spring onions. Leave to rest for 8hrs. Serve with slide bread. AIRAG MILK: Clean the animal sack carefully. Add in airag milk, considered as yeast. Add in fresh horse milk. Add fresh noodles, season with salt and add salty wild chives add curds. 🇲🇳 CAMEL MILK TEA: Boil water and add tea leaves, fresh camel milk and mix. Boil and filter it. 🇲🇳 MILK VODKA: Add airag camel milk and curd to the bottom layer of the pot and boil. Put on the body pot. Hang the collector - small pot. Use fabric to cover the top pot. Add the top pot and pour water. Let it boil for 2 hours. The steam/dripping in the collector is milk vodka. 🇲🇳JEMBII BBQ: Add organ fat to the heated pot. Add camel ribs, lake salt and mix. Add in more meat and then close the lid, allowing it to fry. Repeat this step until it is cooked. Prepare the chives dough: using flour and wild chives. Add potatoes, onions and water. Season with salt. Let it cook until it is tender/soft. Continue to cook until the chives dough is cooked. 🇲🇳HUMP OIL: Boil water and cut the humps into smaller pieces. Add the humps. Let it boil. Remove the hump and wait until the fat water is frozen. Use as oil. 🇲🇳DUMPLING: Prepare dough. Chop meat and onions. Stuff mixture within the dough and steam for an hour. 🇲🇳 GRILLED HEART: Slice heart into small and thin pieces. Skewer sliced heart and onions. Score the meat and add to grill. In our first episode we taste the real Mongolian BBQ known as "Boodog". A full goat cooked within itself using ancient nomadic recipes. This is the authentic Mongolian barbecue a dish traditional enjoyed during the long winter months. We had no idea what to expect going into this but what we saw amazed us. First we had a traditional meeting with the boodog master. After that we needed a goat for our BBQ so we headed to the hills surrounding the families ger to catch ourselves a sheep. We were told a brown sheep would produce the best final result. Once we had the goat the very particular process of preparing the animal for cooking was preformed by the boodog master. This was something hard to watch but thought provoking. Life here out here on the steppe is tough. Next stones were heated in a fire before finally filling the the goat hide full of its own meat and hot stones, layering with minimal ingredients. This is one of the most unique and rare cooking techniques we've ever witnessed. Once stuffed the goat was sealed and torched from the outside for about an hour non-stop. It was time to eat! Enjoying this traditional BBQ in Mongolian with a true nomadic family was itself an experience, not to mention the food was delicious! NOMAD FAMILY HOME IN DARKHAN MONGOLIAN BREAKFAST MILK TEA: Boil water and add black tea leaves, wild tea, fresh cow milk, and add salt. Mix with a ladle. Filter milk tea to separate tea leaves and store in a thermos. BOORTSOG (Fried dough): Prepare flour dough by mixing flour, milk, sugar, yeast, and milk grease together. Let it rest. Cut the dough into smaller portions & shape it into pieces. Prepare a hot pan and add animal fat then fry and turn around until it is brown. KHAILMAG (Carmalized Clotted Cream): Heat the Urum, add flour, and mix. Add raisins and sugar then mix. Remove the fat layer for use in the next dish Zambaa. Make Urum (clotted cream) from the boiled milk after removing the first layer after it’s been laid for 24hrs. ZAMBAA (Barley dough): Prepare barley flour and add the fat from Khailmag, then add sugar. Squeeze in the shape of one hand. AARUUL: Wet curd is stored in a fabric sack. Pressure it using a heavy stone. Let it dry and drain out water for some days. Use string to cut it into many sticks. Let it dry outside (air dry) for months, until it is tough. GOAT BOODOG: Heat the stone. Make a careful slit in the goat and remove all the internal parts. Insert metal string which will be used to tie the goat after stuffing. Trim the meat inside the sack. Prepare potatoes and onions. Stuff meat & veggies inside the sack. Add hot stones and layer with meat. Season with salt & black pepper. Tie the sack. Shake to evenly spread the stones. Use a blowtorch to burn hair and scrape it off. After, wash the sack. Use blowtorch for 4 hours until cooked. Apply a raw fat layer on top of the boodog and blowtorch it, then wait until it is melted. Recipe Ingredients - 800g beef skirt, sliced into 1-4cm strips - 60ml neutral flavoured oil (peanut or canola work well) - 100g cornflour - 10g salt - 10g white pepper - 5g MSG (optional) - 6 garlic cloves, finely minced - Big knob of ginger, finely sliced - 4 spring onions, cut into 3cm pieces - 150ml soy sauce - 100ml water - 150g brown sugar - 10 dashes Maggie seasoning Method 1. Once you have your beef sliced, put it in a bowl with the cornflour, salt, white pepper, and MSG and toss the beef until it's well coated, shaking off any excess. 2. In a wok over high heat, heat your oil to smoking point and add the beef in batches until it has a nice colour all over. Remove beef from the wok and sit aside leaving the oil in the wok. 3. Add your spring onions and ginger to the wok and stir fry for one minute. 4. Add your soy sauce, water, Maggie seasoning, and brown sugar and stir over the heat until the brown sugar has dissolved. 5. Add the beef back to the wok and stir through the sauce, reducing it until you have the consistency you're looking for - it should be relatively thick and stick to the beef well. 6. Serve with fresh spring onion greens and steamed rice.
