It's absolutely delicious and everybody loves it- no doubt about that. Sometimes maybe you don’t know what to cook for dinner, this is it! INGREDIENTS FOR THE CHICKEN FRIED RICE [serve 1-2] For the chicken marinade - 150 grams of chicken - 1 tsp of corn starch - 1 tsp of soy sauce - 1 tsp of vegetable oil - a pinch of baking soda(NOT BAKING POWDER Sorry for the audio mistake in the video) FOR THE STIR FRYING - 2 eggs - 3 tbsp oil - 2 cups of cooked rice - 1 tbsp of minced garlic - 1/4 cup of red onion - 1/3 cup of green beans - 1/2 cup of carrot - 1/4 cup of spring onion FOR THE SEASONING - 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: 🤍 - 2 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce: 🤍 - 1/4 tsp of salt or to taste - pepper to taste HOW TO MAKE CHICKEN FRIED RICE - Cut the chicken into small pieces. Mix it with 1 tsp of corn starch, 1 tsp of soy sauce, 1 tsp of vegetable oil and a pinch of baking soda. Set it aside for 30 minutes. - Crack 2 eggs. Beat it well. - Heat up the wok. Add about 1 tbsp of vegetable oil. Give it a toss, so the bottom is coated nicely. - Wait until there is smoke coming out. Pour in the egg. Will take about 30-50 seconds to get the it fluffy. Break it into small pieces and set it aside. - Add more oil into the same wok. Heat it up and add in the chicken. Saute it about 1 or 2 minutes. Then push it to the side so you have room for the vegetables. Dump in all your veggies, which are 1 tbsp of minced garlic, 1/4 cup of onion, 1/3 cup of green beans and 1/2 cup of carrot. Stir-fry for 2 to 3 minutes. - When the onion should be transparent, Add some salt to taste. Mix it well. - Take it out. - Next is the rice. Loosen up the rice before frying. - Turn on the gas to high, Heat up the wok for about 15 seconds. Then add 2 tbsp of vegetable oil. Put in the rice right after that. Use your spatula to break down the big pieces. - You need to stir fry this for 3-5 minutes. Then add in our seasoning, 1 tbsp of light soy sauce, 2 tsp of dark soy sauce. - Now you really got to mix this. Do it fast. Because the wok is hot, the liquid will evaporate quickly- then you will never get to mix it evenly. Once can not see white rice, add in all the ingredients. Veggies, meat, oh and the egg... - Toss everything together. Give them about 2 minutes to be infused with each other. - Add in the spring onion right before serving. Hope you enjoy! Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime. This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time. Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice. Dice the stem part of Chinese broccoli into thin rounds and cut the leaf part into bigger pieces, so they cook simultaneously. If using regular broccoli, use your judgments to dice it into the same size pieces. Crack two eggs and beat them well. Combine the seasoning ingredients in a bowl before cooking. Turn the heat to high and heat the wok until smoking hot. Add 1.5 tbsp of oil and swirl it around to cover the bottom. Pour in the beaten egg. Wait for it to set, then use the spatula to break the egg into smaller pieces. Turn off the heat. Remove the egg from the wok. Turn the heat back to high. Add more oil to the wok (1.5 tbsp) and stir fry the beef until nicely charred. Turn off the heat. Remove the meat from the wok. Make sure you tilt the wok so you can leave the oil behind. Turn the heat back on low. Use the leftover oil to saute the garlic, ginger, preserved radish, carrot, and the stem part of the Chinese broccoli. Stir for a couple of minutes or until the vegetables are cooked through. Switch the heat to high and add the day-old rice. Stir this for a few minutes or until some of the rice grains are jumping in the wok. Add the sauce and stir until well mixed. Add the egg, the beef, and the leafy part of the Chinese broccoli. Quick one today - we figured that we should definitely cover the topic of steaming rice for frying rice. Generally, people will use day old leftover rice for fried rice - works perfectly well, but steamed rice has some advantages: - You can use freshly cooked rice for your fried rice - Steamed rice is easier - and a bit quicker - to fry - The fried rice does not have small clumps - Because you jostle it around alot less when frying, it helps maintain the integrity of the grains Make no mistake: using day old rice is still a perfectly delicious and valid approach. But for all the above reasons, steamed rice is just a little... better. And as we promised in the video, here's the uncut (and uncolored, and inside lol) video of making the fried rice with a non-stick skillet: 🤍 HOW TO STEAM RICE We used 150g of Jasmine Rice (泰国香米). 1. Rinse the rice 3-4 times until the water loses about half of its opacity. 2. Par-boil for ~3 minutes, or until the grain becomes white and the water becomes cloudy. Be sure to stir as you add the rice into the boiling water, else it'll stick to the bottom. 3. Strain. Immediately move over to your steamer, lay on a wet cloth. Poke a few holes in the rice to let it steam evenly. 4. Steam over high for 10 minutes. Shut off the heat. Let it sit over the hot water for another 5 minutes. 5. Fluff, then lay out on a plate to cool down a touch. It'll be ready to go in 15-20 minutes. The nice thing about steamed rice is that you can really lay as much rice as'll fit in your steamer. Traditionally there's be these big steaming buckets that can really feed a family or a restaurant. Chinese style steaming buckets seem a bit over-priced on Amazon, but you could also use a Thai style one and just lay a cloth over the top of it as a lid. And of course, if you want to use leftover steamed rice as fried rice the next day, that's also great. HOW TO MAKE A BASIC EGG FRIED RICE Nothing fancy here. Using the rice quantity from above - 150g dried, which works out to ~250g steamed rice. 1. Longyau - get your wok piping hot, shut off the heat, add in the oil (here we used ~1 tbsp lard), and give it a swirl to get a non-stick surface. 2. Flame on medium, heat the oil up til it can bubble around a pair of chopsticks, then toss in one thoroughly beaten egg. Give a quick scramble, scooch up the side of the wok. 3. Up the flame to high. Add the steamed rice, stir fry together with the egg for ~1 minute, or until the rice can reasonably flow off your spatula. 4. Season with 1/4 tsp salt, 1/4 tsp sugar, 1/8 tsp white pepper powder, sprinkle of MSG. Quick mix. 5. Add in some sliced scallions. Quick mix, heat off, out. Remove from pan. 4 cups cooked jasmine rice 4-5 cloves minced garlic 4-5 garden onions - whites and greens separated 1/4 cup diced carrots 1/4 cup diced bell pepper 1/2 cup peas 1-2 chopped red chilies - optional 1 tsp. mushroom dark soy sauce - I use Pearl River 1-2 tbsp. oyster sauce oil - I use avocado oil In medium high heat pan add minced garlic and whites of garden onions. Cook and stir for 15 seconds. Add diced carrots and bell peppers. Cook and stir for 2 minutes. Add red chilies - optional. Add rice, meats, eggs, oyster sauce and dark soy sauce. Cook and stir to combine. Add in chopped green onions. Give final stir and serve. This is a special seasonal fried rice; Lawei 腊味 means cured meat. When winter comes, Cantonese people will start curing meat. If you live in Guangdong China, you will see lots of people hanging bacon, sausage, chicken, duck, even fish on their balconies. It is also my family’s tradition. This fried rice is packed with umami flavor from the cured meat. It is so delicious that I always crave it during the winter. 🥢PRINTABLE RECIPE - 🤍 🥢SUPPORT ME ON PATREON - 🤍 INGREDIENTS 2 tbsp of cooking oil 2 eggs 500 grams (3.5 cups, tightly packed) of cooked day-old rice 70 grams (2.5 oz) of Cantonese cured bacon, sliced thinly 70 grams (2.5 oz) of Cantonese sausage, sliced thinly 4 pieces of dried shitake mushroom, soaked 2 hours in advance 2-3 tbsp of the mushroom soaking liquid 120 grams (4.2 oz) of Chinese broccoli 2 scallions, finely diced 2 cloves of garlic, finely diced 2.5 tbsp of soy sauce 1/2 tsp of sugar INSTRUCTIONS Slice the Cantonese sausage, Cantonese cured bacon and soaked mushroom thinly. Separate the leaf and the stem of the Chinese broccoli. Dice the stem part into thin rounds. Roughly cut the leaves. Crack 2 eggs, whisk them really well until you don’t see any obvious egg white. Stir Cantonese sausage, cured pork belly, and shitake mushrooms in a wok over medium heat for a few minutes or until the sausage and cured pork belly becomes slightly translucent. Don’t overcooked them because they do burn quickly as they have pretty high sugar content. Turn the heat to high. Push everything to the side and drizzled in about 2 tbsp of oil. our in the egg. Throw in the leafy part of the gai lan. Keep mixing until all the greens are welted. Toss in some diced scallions. Taste before serving so you can adjust the flavor because different brands of sausage and cured pork belly have different amounts of sodium. Enjoy!

One of the most popular Chinese dishes ever, Fresh cut vegetables and rice tossed in spicy schezwan sauce thus makes a full meal by itself. You can have it as it is, with no need for anything else to go with it. SCHEZWAN FRIED RICE Ingredients 1 tablespoon Schezwan sauce 1½ cups short grain Basmati rice, soaked for 20 minutes and drained Salt to taste 1 medium carrot 6-8 French beans 1 medium green capsicum ½ medium cabbage 3-4 stalks spring onion greens 1 spring onion bulb 1 tablespoon oil White pepper powder to taste ½ teaspoon broth powder 1 teaspoon vinegar Method 1. Heat 5-6 cups water in a deep non-stick pan. Add salt and bring to a boil. Add rice, mix lightly, cover and cook till rice is ¾th done, stirring occasionally. Strain in a colander, spread on a plate and set aside to cool. 2. Chop carrot, French beans, capsicum, cabbage, spring onion greens and spring onion bulb. 3. Heat oil in a non-stick wok. Add chopped vegetables and sauté for 1-2 minutes. 4. Add Schezwan sauce, pepper powder and broth powder and mix. Add cooked rice and toss well. 5. Add half the spring onion greens, mix and cook for 1-2 minutes. Add vinegar and mix well. 6. Garnish with remaining chopped spring onion greens and serve hot.
