Simple Chicken Biryani for Beginners | Chicken Biryani Recipe for Bachelors | Simple Chicken Biryani for Bachelors | Chicken Biryani with Biryani Masala | Chicken Biryani | Chicken Biryani Recipe | How To Make Chicken Biryani | Easy Chicken Biryani Recipe Ingredients for Chicken Biryani: - Chicken, large pieces with bones- 1 kg - Basmati Rice- 700 gms (4 US cup measure) For Cooking Chicken: - Onions, sliced- 400 gms (around 5 medium sized onions) - Ginger Garlic paste- 2 tbsp - Tomatoes, sliced- 4 medium - Green Chillies, slit- 6 numbers - Coriander leaves, chopped- 1 cup - Mint leaves, chopped- 1 cup - Whisked curd/plain yogurt- 1 cup - Ready made Biryani Masala- 5 tbsp For Cooking Rice: - Shahjeera (caraway seeds) - 1/2 tsp - Green cardamom - 4 - Cloves - 4 - Cinnamon- 2 pieces - Salt- 2 1/2 tablespoon - Water to boil the rice- around 2.5 litres - Mint leaves - around 10- 15 leaves Preparation : - Clean & wash the chicken pieces. Drain the water or pat dry. - Slice the onions and tomatoes. Slit 6 green chillies - Chop 1 cup coriander leaves and 1 cup mint - Whisk the yogurt and set aside - Wash & soak the Basmati Rice for 30 mins. Process : To cook the Chicken: - Heat 6 tbsp oil in a heavy bottom pan and add the sliced onions. - Fry on high heat for around 12 mins till the onions are light brown. - Add the ginger garlic paste and fry on low heat for 2 mins. - Now add the chicken pieces, mix and fry on high heat for 2-3 mins. - Add the ready made Biryani Masala, mix and fry on medium heat for 3 mins after adding a splash of water. - Readymade Biryani Masala usually contains salt, hence salt is not added while cooking the chicken in this recipe. Do check if the biryani masala you are using has salt in it. - Now add the sliced tomatoes, mix it well and cook on medium to low heat for 4-5 mins till soft. - Keep the heat on low and add the whisked curd/yogurt. Give a mix and then add the chopped coriander and mint leaves. - Cook on low heat for 2 mins till oil separates. - Cover & cook on low heat for around 20-25 mins till chicken is tender. Remove lid after 10 mins, give a mix and close the lid again. - Dry up any excess water to get a thick gravy. To cook the Rice: - Take one more heavy bottom pan & add around 2.5 litres of water. Place it on high heat. - You may include the water in which rice was soaked in this 2.5 litres for enhanced flavour & taste. - Once the water starts to boil or bubble, add Shah Jeera - 1/2 tsp, Green cardamom -4, Cloves - 4, Cinnamon- 2 pieces and Salt- 2 1/2 tablespoon (two and half tablespoon) - Stir it well to dissolve the salt completely . The water must be very salty. - Once the water starts boiling, add the strained basmati rice & stir it well. - Continue to boil it on high heat, stirring few times very gently to not break the rice. - After 8-9 minutes when the basmati rice is almost done (90%) remove it from heat and strain the water. Set it aside. Layering the rice and cooked chicken: - Take a heavy bottom pan and spread half the cooked rice as the 1st layer. - Now spread the cooked chicken with gravy on top of the rice uniformly as shown in the video. - Next, spread the balance rice as the top layer. - Sprinkle some mint leaves on top of the rice. Their hospitality shined and thanks to them for arranging this incredible experience, being able to see the entire process. Chef is originally from Old Dhaka and brought 30 years of biryani making experience. He could literally make biryani with his eyes closed… not recipes, just his experience and knowledge of the ingredients. There were at least 18 spices, more like 30 ingredients all together, all layered and placed strategically for flavor. Chef making kacchi biryani was one of the most amazing recipes I’ve ever seen. While the kacchi biryani was cooking, his brother in law made chicken pulau, another Bangladeshi food that eaten during celebrations and special occasions. Unlike kacchi biryani, the pulao is milder in spice, but more creamy and milky. Again it was an amazing recipe, the spices and ingredients, and the order and method in which it was assembled. Three or four hours after we started, the Bangladeshi kacchi biryani was ready. The rice was unbelievably fragrant and flurry, and melted in your mouth. The spices were perfect, a harmony of flavor out of control. The fresh goat was so tender it collapsed on your fingers. It was literally a perfect biryani and one of the best versions of biryani I’ve ever had in my life - kacchi biryani! Today we cook mutton inside biryani with three full goats. We cooked biryani first, then we stuffed it in the goats. Then we steam all three goats. This biryani taste like mutton mandi biryani. The taste is delicious!

Ingredients - 1kg chicken thighs - 500g basmati rice - 4 red onions, sliced - 10 cloves garlic, crushed - 2 knobs of ginger, finely grated - 1 tbsp ground cumin - 1 tbsp chilli powder - 1 tsp turmeric - 1 tbsp salt for chicken marinade - 200g yogurt - 4 tomatoes, finely diced - 2 green chillies, halved - 3 tbsp ghee (reserve 1 tbsp for the final assembly) - 1 cinnamon stick - 4 green cardamom - 1 tbsp coriander seeds - 2 tbsp garam masala - 1 bunch mint - 1 bunch coriander Method 1. Marinate your chicken in the yoghurt, turmeric, cumin, chilli powder and 1/2 of the garlic and ginger. 2. Wash your rice under cold water and leave it to soak for 20 minutes. 3. Bring a large pot of salted water to a boil and add the rice. Cook for 6-7 minutes or until it's about 2/3 cooked, and then drain the water. 4. In a large pot, heat the ghee and flavour with the cinnamon stick, green cardamom and coriander seeds. After a few minutes, add the onions and a tbsp of salt and sauté for 15-20 minutes, stirring often. 5. Remove 1/4 of the cooked onions and set aside for the final assembly. 6. Add the remaining garlic and ginger to the pot and sauté for 2-3 minutes. 7. Add the marinated chicken, followed by the diced tomatoes, green chillies and garam masala. 8. Stir well and cook for 15-20 minutes or until the tomatoes are completely soft. 9. In a large pot you have the lid for, start the assembly of the biryani by pouring the remaining ghee into the bottom, followed by a layer of rice, then a layer of chicken and a sprinkling of the mint and coriander. 10. Repeat this until all the rice and chicken is in the pot. 11. Make sure your last layer is rice on top with the reserved sautéed onions. 12. Optionally, you can warm 3 tbsp of milk with a pinch of saffron and pour over the final assembled biryani. 13. Seal the pot by using a tea towel under the lid and cook for 25 minutes on low. 14. Serve with more chopped mint, coriander and some crispy shallots (optional). 15. Enjoy!

CHICKEN DUM BIRYANI | चिकन दम बिरयानी - One of the most requested recipes on my channel, here's my recipe for making Chicken Dum Biryani at home. 🍽️𝗔𝗠𝗔𝗭🥘𝗡 𝗦𝗛🍳𝗣 🍽️ RB Store - 🤍 Kitchen Appliances - 🤍 Knives I use - 🤍 * 𝗖𝗹𝗶𝗰𝗸 𝗵𝗲𝗿𝗲 𝘁𝗼 𝘀𝗶𝗴𝗻 𝗺𝘆 𝗽𝗲𝘁𝗶𝘁𝗶𝗼𝗻 - 🤍 * ⏩𝓢𝓾𝓫𝓼𝓬𝓻𝓲𝓫𝓮 𝓱𝓮𝓻𝓮: 🤍 * 𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼: Preparation Time: 30 minutes + 3 hours Marination Cooking Time: 40 minutes Serves: 4 Cuisine: Indian Course: Main Course Ingredients: 🍛 For Rice 1 kg Basmati Rice, washed and rinsed 4 Cloves ½ inch Cinnamon 2 Green Cardamom pods Salt to taste ¼ cup Ghee, melted For Marinade 1 kg chicken with bone, cleaned and washed 4 medium onions, sliced 2 tbsp barista/fried onion 1 tbsp saffron water 2 sprigs of mint leaves ½ cup curd, beaten 1 tsp coriander powder 1 tbsp degi chilli power ½ tsp green chilli paste 1 tbsp Ginger Garlic paste 3-4 green chillies, slit Salt to taste Other Ingredients 1 tbsp ghee ¼ cup water ½ cup milk 2 tbsp saffron water 1 tbsp ghee Few mint leaves 1 tbsp barista Salt to taste 2 tsp saffron water ½ tsp rose water Drop of kewra water Raita Process ♨️ For marinade • In a mixing bowl, add chicken and marinate with all the ingredients. • Let the chicken marinade preferably overnight or for minimum 3 hours. For Rice • Let the rinsed rice rest for 20 minutes. • Heat water in pot, add ghee and salt. • Add in cloves, cinnamon and green cardamom. Add rice and let it come to a boil. Immediately lower the flame and cook on low flame for 80%. For Biryani • In a heavy bottom pan, add ghee and marinated chicken. Cook for about 7-8 minutes. • In another pan, layer the biryani. Add rice, chicken and then top it off with rice. Add in the chicken gravy on top. • In the chicken’s pan, add water, milk, saffron water, ghee, mint leaves, barista, salt and coriander leaves. Add this jhol in the biryani. • Add some more saffron water, rose water and few drops of kewra water. This classic Chicken Biryani recipe by vahchef is easy to follow Loved by all food lovers across the world, Choose from many types of briyani this is kind of restaurant style of preperation of birtani they do dum process they cook chicken together with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mix rice and chicken togeather and serve because the same rice can also used for vegetarins. 🤍 Ingredients: Chicken 1500 g Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tb Directions: First make a powder of all the spices, Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid.
