#lachhaparatha #howtomakelachhaparatha #lachhaparatharecipe #lachhaparantharecipeinhindi #khatriskitchen #$ 🤍 & #paratharecipes #parantha #indianparatharecipes #indianfood #lacchaparatharecipevideo #plainparatha #swag ## Product Link: Nirlon Fry Pan 🤍 Ashirvad Atta 🤍 हिंदी में रेसिपी सामग्री: • गेहूं का आटा - 2 कप • नमक - 1/4 छोटी चम्मच • घी - 3 से 4 बड़ी चम्मच विधि: • एक बर्तन में गेहूं का आटा एवं नमक मिक्स कर लेंगे और थोड़ा थोड़ा पानी डाल कर आटा गूँथ लेंगे। • सॉफ्ट आटा गूथेंगे और थोड़ी देर तक हाथ से मथेंगे । 1/2 छोटी चम्मच तेल चारों तरफ लगा लेंगे ताकि आटा सूखे नहीं । • कपडे से ढक कर 15 मिनट के लिए रख लेंगे, और फिर से थोड़ा मथ लेंगे। • अब आटे की एक बड़ी लोई लेंगे और उस पर थोड़ा सूखा आटा लगा कर अच्छे से बड़ी रोटी बेल लेंगे। • अब पूरी रोटी पर 1 से 1.5 छोटी चम्मच घी लगा लगा लेंगे। (घी थोड़ा जमा हुआ लेना है एकदम पिघला हुआ नहीं) • इस पर थोड़ा (एक छोटी चम्मच जितना) सूखा आटा लगा लेंगे और अच्छे से पूरी रोटी पर फैला लेंगे। • इस रोटी की छोटी छोटी परतें वीडियो में दिखाए अनुसार बना लेंगे। सारी परतों को हल्के हाथ से दबाएंगे। • अब इस लम्बे परतों वाले आटे को किनारी से पकड़ कर थोड़ा लंम्बा कर लें ताकि लच्छे अच्छे से बनें। • अब एक तरफ से पकड़ कर इसको अच्छे से पूरा गोल कर के लोई बना लें और फिर से हल्के हाथ से थोड़ा सा दबाएं। इसी तरह सारी लोई बना लेंगे। • सारी लोई को एक कपडे में ढककर 5 - 10 मिनट के लिए रख देंगे । • अब एक लोई पर थोड़ा सा सूखा आटा लगाकर हल्के हाथ से बेलना शुरू करेंगे और गरम तवे पर सेकने के लिए रख देंगे। थोड़ा पक जाने पर पराठा पलट देंगे। • दोनों तरफ एक - एक छोटी चम्मच घी डाल देंगे और और अच्छे से सेक देंगे। (घी की जगह तेल भी लगा सकते हैं) • ढेर सारी परतों के साथ स्वादिष्ट लच्छा पराठा खाने को तैयार हैं, परोस देंगे। Recipe in English: Lachha Paratha Introduction : the lacha paratha is a typical paratha of rajasthan. This is made with wheat flour with special efforts put in while rolling out the paratha to form layers within the paratha. It is best accompanied with a gravy or a curry vegetable. Ingredients : • Wheat flour - 2 cups • Salt - 1/4 teaspoon • Ghee - 3 to 4 Tablespoons Method: • Mix wheat flour and salt in a vessel and add little water and make dough • Make a soft dough and knit it with hands for a few minutes. Apply 1/2 teaspoon oil on the dough so that the dough does not dry. • Cover the dough with clothes and keep it aside for 15 minutes, and then knit it again. • To make the paratha you will take a large portion of dough and apply a little dry flour on it and will make the big roti out of it. • Now, 1 to 1.5 teaspoons of ghee will be applied on the whole roti. (Ghee is a bit thickened not completely molten) • Add a little wheat flour (as small as one teaspoon) on it and spread it all over the entire roti. • Make small layers of this roti as shown in the video. Pull all the layers together with a light hand. • Now grab this long layer dough from the edge and make a little longer so that the layers come out well. • Now hold on to one side and make a fine finish by making it a perfect circular shape dough and then again press it slightly with hands. In the same way, all the rotis will be made. • Cover all the made dough balls in a cloth and keep it for 5-10 minutes. • Now put a little wheat flour on a dough ball and start rolling with a light hand and keep it on the hot pan. Once the paratha is a little cooked, flip it over. • One on each side - put one teaspoon of ghee and cook it well. (Oil can be replaced by ghee) • Lachha paratha with lots of layers are ready to eat, serve them hot.

(for one roll) • Salt to taste Salad: • Onions 3 medium sized (sliced) • Cucumber 2 nos. (deseeded & julienned) • Lemon juice 1 tsp Method: • In a mixing bowl, add maida, sugar, salt and ghee, lightly mix until its combined well. • Further add warm water gradually and knead to make a soft dough, once its almost formed like a dough, transfer over the platform and start to knead well by pulling & stretching it well, we have to knead the dough well for at least 4-5 minutes or until the dough is soft and stretchy. • Tuck it inwards and shape to make a smooth surface dough, apply oil over the dough surface, cover and rest for at least 30 minutes. • After the rest, divide the dough balls in equal size dough balls. As the dough is ready to be shaped, you can shape the parotta in 2 ways, one is by, take a dough ball flatten with hands, and further use a rolling pin, roll to make a chapati, evenly brush oil/ghee and sprinkle some dry flour, make a slit from the centre like we cut a cake, further start to roll sidewards in circular motion to make like a cone, then press to make a thick disc, further coat with dry flour and roll to make a little thick size paratha. • Other way to make parotta is, take a dough ball flatten with hands, and further use a rolling pin, roll to make a chapati, evenly brush oil/ghee and sprinkle some dry flour, fold the chapati while making the pleats, roll the dough and tuck inwards to seal properly, apply oil over the rolled dough balls, cover and rest it for 10 minutes, after the rest press to make a thick disc, further roll to make a little thick size paratha. Your parotta is ready to be cooked. • Set a tawa on medium high heat, add oil, place the parotta and cook from both the sides, by the time on side, break two eggs and add in a bowl, along with salt, whisk well and pour the whisked egg over the paratha, flip and cook until the egg is cooked and the parotta is golden brown in colour. Your egg parotta is ready. • To make salad, add onions, cucumber & lemon juice, mix well and rest for at least 15-20 minutes. • As the components are ready, we can make the rolls. A paratha is a flatbread that originated in the Indian Subcontinent. Everyones favourite here ...people call it with different names in different regions .parantha, forota (in Sylheti), parauntha, prontha, parontay, porota (in Bengali), palata (pronounced: [pəlàtà]; in Burma), and farata INGREDIENTS: All-purpose flour 3 cups salt 2 teaspoon egg one water (at room temprature ) to make the dough ghee (clearified butter) all-purpose flour to use for layering. method: 1. Roughly mix all-purpose flour and salt 2. Add egg and water in this flour and salt mixture and make a dough..consistency of the dough should be just like pizza dough ..not too soft or not too hard .. 3.let the dough rest for atleast 30 minutes into the refrigerator. Note .this recipe will make four parathas.so devide the dough in four parts. 4.make dough balls for paratha as shown in the video using ghee(clearified butter) and all-purpose flour it will give beautifull soft layers to the paratha... Note:we used ghee(clearified butter) in layering you can also use vegitable oil or margerine if you don,t like to use ghee(clearified butter). 5: For best results Refrigerate these doughballs for atleast 15 minutes . Rolling refregerated dough balls will be easier for you as well. 6: Roll these dough balls to about 6-7 inches in diameter. 7: steak them applying ghee or oil on both sides as shown in the video, keep the heat medium. Voila ..parathas are ready with crispy layers outside and soft layers inside serve hot. With spicy mince , tikka seekh kebab , chicken tandoori or simply with omelett . Full written recipe Paneer Kathi Roll For the dough Ingredients: • Refined flour 2 cups • Sugar 1.5 tbsp • Salt 1 tsp • Ghee 2 tbsp • Warm water (as required) Method: • Take a large bowl & add the refined flour in it along with sugar & salt, mix it well. • Further add ghee & mix again, now add warm water as required, slowly in batches & combine everything well. • Once everything comes together, transfer the dough onto the kitchen platform and knead it well, initially the dough will be sticky with an uneven surface, stretch the dough while kneading until it becomes soft & non-sticky, knead for 10-12 minutes. • Once the dough becomes smooth & non-sticky, form it into a ball by tucking the edges underneath, drizzle some oil, cover it with a damp cloth & let it rest for an hour at least. • Your dough is ready. For making paneer: Ingredients: • Mustard oil 2 tbsp • Kashmiri red chilli powder 1 tbsp • Garam masala ½ tsp • Black salt ¼ tsp • Ginger garlic paste 1 tbsp • Lemon juice 1 tsp • Curd 1/3 cup • Salt to taste • Paneer 250gm • Onion 1/3 cup (lacche) • Capsicum 1/3 cup (julienned) • Tomato 1/3 cup (julienned) • Red chilli powder 1 pinch Method: • Take bowl, add mustard oil & kashimiri red chilli powder, whisk it well to release its natural colour. • Further add garam masala, ginger garlic paste, lemon juice, curd, salt to taste and mix it well using a whisk, at this stage you can smoke the marinade for 3-4 minutes using live charcoal & ghee. • Further the paneer into cubes & add them to the marinade, mix well. • Now set a pan on high heat & add some oil into it for sautéing, once the oil is heated add the marinated paneer cubes & cook on high flame for 2-3 minutes, avoid frequent stirring to prevent the paneer cubes from breaking. • Once the marinade dries out & paneer gets a nice colour add onions & the remaining veggies with red chilli powder, toss everything well on high flame for 1-2 minutes. • Your paneer filling is ready. Cooking the paratha Ingredients: • Dough • Oil (for drizzling) • Ghee (for brushing) • Refined flour (for dusting) • Oil (for cooking) Method: • Once the dough has rested roll it into a log & cut equal portions of dough balls from it, drizzle some oil over the dough balls & let them rest for 10 minutes at least, this helps the gluten to relaxes which makes it easier to roll. • Transfer the dough ball on to a greased platform & flatten it a bit using your finger, further roll it into a thin chapati using a rolling pin, now brush ghee on the surface of the chapati & sprinkle some refined flour over it, now lift it from one end & start making pleats, then roll the pleated chapati from one end to other & tuck the last portion of it underneath. You pede for parathas are ready. • Now dust the peda in dry refined flour & using a rolling pin roll the peda to form a chapati, make sure it is neither too thick nor too thin. • Set a pan on medium high heat & let it heat nicely, now lay the rolled-out paratha on the pan & cook without oil, press the paratha using a napkin so that it cooks evenly, once it cooks slightly from one side flip & cook it the same way on the other side. • Further add some oil to the pan & cook until one side gets crispy, flip & cook it the same way on the other side until it gets crispy, make sure that you keep pressing it so that it cooks evenly. • Your paratha is ready.
