RB Store - 🤍 Knives I use - 🤍 * Join 𝗧𝗲𝗹𝗲𝗴𝗿𝗮𝗺 𝗕𝗿𝗼𝗮𝗱𝗰𝗮𝘀𝘁 𝗖𝗵𝗮𝗻𝗻𝗲𝗹 📬 - 🤍 * ⏩𝓢𝓾𝓫𝓼𝓬𝓻𝓲𝓫𝓮 𝓱𝓮𝓻𝓮: 🤍 * 𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼: Chole Bhature - 🤍 Chole Poori - 🤍 * For more fantastic recipes, check out the Ranveer Brar App: 📲𝐀𝐧𝐝𝐫𝐨𝐢𝐝 - 🤍 📲𝗶𝗢𝗦 - 🤍 CHOLE MASALA (Without Soaking) Preparation time 10 minutes Cooking time 30-35 minutes Serve 2-4 Ingredients For Soaking 2 cups warm Water, गुनगुना पानी Salt to taste, नमक स्वादअनुसार 1 ¼ cup Chickpeas, छोले For Boiling Soaked Chickpeas, छोले 2 cups Water, पानी 1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर ½ tsp Turmeric powder, हल्दी पाउडर 1 Garlic cloves, roughly crushed, लहसुन ¼ inch Ginger, slice, अदरक 1 Green chilli, हरी मिर्च 1 tsp Baking soda, बेकिंग सोडा 2 Dry Byadgi Red Chilli, बेडकी लाल मिर्च 1 Black cardamom, बड़ी इलायची For Ginger Garlic Paste 4-5 Garlic cloves, लहसुन 1 inch Ginger, roughly slice, अदरक 2 Green chillies, हरी मिर्च Salt to taste, नमक स्वादअनुसार For Curd Mixture ½ cup Curd, beaten, दही 1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर 2 tbsp Coriander powder, धनिया पाउडर ½ tsp Turmeric powder, हल्दी पाउडर For Tempering 2-3 tbsp Oil, तेल 2 tbsp Ghee, घी 2 Bay leaf, तेजपत्ता 4-5 Black peppercorns, काली मिर्च के दाने ½ inch Cinnamon stick, दालचीनी 1 Dry red chilli, सुखी लाल मिर्च Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट 4 medium size Onion, chopped, प्याज 2 Green chillies (less spicy) हरी मिर्च 2 medium size Tomato, chopped, टमाटर 1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण Boiled Chickpeas, छोले Water, पानी 1 tsp Tender Coriander stems, chopped, धनिया के डंठल Salt to taste, नमक स्वादअनुसार 1 tbsp Ghee, घी ¼ cup Water, पानी 1 tbsp Coriander leaves, chopped, धनिया पत्ता ½ tsp Black pepper powder, काली मिर्च का पाउडर For Garnish ¼ inch Ginger, julienned, अदरक Onion, rings, प्याज Coriander sprig, धनिया पत्ता Process For Soaking In a shallow pan, add water, salt to taste. Once it gets warm add the water into a bowl. In a bowl, add chickpeas, warm water and let it soak for 30 minutes. For Boiling In a cooker or sauce pot, add soaked chole, water, degi red chili powder, turmeric powder, crushed garlic, green chili, ginger, baking soda and byadgi red chillies, black cardamom. Cook it for 5-6 whistles. For Ginger Garlic Paste In a mortar pestle, add garlic, ginger, green chilli, and salt to taste. Make a coarse paste and keep it aside for further use. For Curd Mixture In a bowl, add curd, degi red chili powder, coriander powder, turmeric powder and mix well. Keep aside for further use. For Tempering In a shallow pan or kadai, add oil, ghee. Once it gets hot, add bay leaf, black peppercorns, cinnamon sticks, dry red chillies and let it splutter well. Now, add ginger garlic paste, onions, green chillies. Cook it on a slow flame for 30 seconds until light golden in color. Now, add tomatoes, pinch of salt, degi red chili powder and sauté well. Add curd mixture and mix well and cook on low flame for 2-3 minutes. Add water, tender coriander stems, salt to taste and let it cook for 10-15 minutes. Add coriander leaves, black pepper powder and mix well. Once done transfer it into a serving dish, garnish it with onion rings, ginger juliennes ,coriander sprig. Serve hot with bhature, rotis or chapati. Written recipe for Amritsari chole bhature Rest time: 5 hours Prep time: 20 mins Cooking time: 1 hour Serves: 6 For Amritsari chole Ingredients: • White chickpeas (Kabuli chana) 250 gm • Garlic cloves 6-7 nos. • Whole spices: 1. Cinnamon stick 1 inch 2. Black cardamom (Badi Elaichi) 1-2 nos. 3. Green cardamom (choti/hari Elaichi)1-2 nos. 4. Cloves (Laung) 3-4 nos. 5. Black peppercorns (Kali mirch) 5-6 nos. 6. Bay leaf (Tej patta) 2-3 nos. 7. Carom seeds (Ajwain) 1 tsp • Black tea concoction (Boil 2 tbsp black tea powder in 250 ml water) • Salt to taste • Water as required • Oil 3 tbsp • Onion paste of 2 medium size • Ginger garlic paste 1 tbsp • Tomato puree of 3-4 medium size • Salt to taste • Green chillies 1-2 nos. (chopped) • Ginger 1 inch(julienned) • Powdered spices: 1. Coriander powder 1 tbsp 2. Red chilli powder 1 tbsp 3. Jeera powder 1 tbsp 4. Anardana powder 2 tbsp • Water as required • Garam masala 1 tsp • Kasuri methi 1 tsp • Fresh coriander 2 tbsp Methods: • Wash the chickpeas and soak it in fresh water for 5 hours or overnight. • Drain the excess water and wash thoroughly with fresh water. • Set a cooker on a medium heat add the soaked chickpeas, garlic cloves, whole spices, strained black concoction to darken the chickpeas, salt to taste and add water so it is 2 inches above the chickpea. Mix well and pressure cook for 3-4 whistles on medium heat. • Switch off the flame and let the cooker depressurize naturally to open the lid. Give it a nice stir. • Check whether the chickpea is cooked or not by mashing it with a fork or spoon, if not, give 1 or 2 whistles more to cook completely. • Set a deep pan or wok on medium heat, add oil, onion paste and cook until golden brown, add a splash of water if the onions stick to the pan. • Add ginger garlic paste and sauté for 1-2 minutes. • Add tomato puree and salt to taste, cook until the oil is released. • Add ginger, green chillies and powdered spices, cook for 2-3 minutes, add 100 ml water, mix and cook for a minute. • Add the cooked chole along with its water and mix well, add water to adjust the consistency of the curry, you can reduce or increase the amount of water depending how thick or thin you want your chole to be, make sure you add hot water and bring it to a boil. • Add garam masala, kasuri methi and freshly chopped coriander leaves, mix and cook further for 2-3 minutes. • Your flavourful Amritsari chole is ready to be served, serve hot with freshly prepared bhaturas or kulcha, accompanied with pickle and onion rings on side. For hot bhaturas Ingredients: • Refined flour 2 cups • Baking powder 2 tsp • Baking soda 1 tsp • Salt to taste • Sugar 1 tsp • Ghee 2 tbsp • Curd ½ cup • Water as required • Oil for deep frying Methods: • In a mixing bowl add Refined flour, baking powder, baking soda, salt and sugar, mix and ad ghee and curd, mix well and incorporate the curd and ghee in the flour. • Add water to knead a soft and stretchy dough, apply oil on the dough surface to prevent it from drying, cover it with a damp cloth and rest it for 1 hour. • Divide the dough balls into small equal dough balls. • Flatten it with hands and further roll in into a little thick chapati, apply oil if it sticks to the surface. • Set a wok or deep pan filled with oil on medium high heat, deep fry the bhaturas in hot oil on both the sides until golden brown in colour, push the bhatura with the frying spoon downwards while frying to fluff up nicely. • Your hot bhaturas are ready to be eaten along with hot chole. Cook it for 3-4 whistles and keep it aside for further use. For Bouquet Garni In a muslin cloth, add cinnamon stick, bay leaf, dry red chillies, black cardamom, cloves, black peppercorn, tea leaves and make a potli of it. Keep it aside for further use. For Ginger Garlic Paste In a mortar pestle, add ginger, garlic, green chillies, salt to taste and make a coarse paste. Keep it aside for further use. For Chole Masala In a pan, add coriander seeds, cumin seeds, black cardamom, black peppercorn, salt to taste, dry red chillies and dry roast everything well. Add asafoetida, degi red chili powder, dry mango powder, carom seeds and roast it for a minute. Transfer it in a grinder jar and grind it into a fine powder. Keep it aside for further use. For Amritsari Chole In a cast iron kadai or a handi, add oil, once it’s hot, add cumin seeds, ginger garlic paste, onion, and saute until golden brown in color. Add chole masala and cook for a minute then add tomato puree and cook for a while or until it gets dark brown in color. Add cooked chole with chole water and simmer it for 5-7 minutes. Add some more chole masala, ghee and mash the ¼ quantity of chole. To finish the chole add fresh coriander leaves and mix well. Transfer it in a serving dish and garnish it with prepared tempering and a coriander sprig. Serve hot with puri. For Tempering In a pan, add oil, green chillies, ginger, degi red chili powder and saute for a minute. This dish is super close to me as I grew up watching it being made on special occasions. .. * 🍽️𝗔𝗠𝗔𝗭🥘𝗡 𝗦𝗛🍳𝗣 🍽️ RB Store - 🤍 Kitchen Appliances - 🤍 Knives I use - 🤍 * Let's help 𝘽𝙖𝙣𝙙𝙚𝙡 𝘾𝙝𝙚𝙚𝙨𝙚 get its GI Tag 𝗖𝗹𝗶𝗰𝗸 𝗵𝗲𝗿𝗲 𝘁𝗼 𝘀𝗶𝗴𝗻 𝗺𝘆 𝗽𝗲𝘁𝗶𝘁𝗶𝗼𝗻 - 🤍 * ⏩𝓒𝓵𝓲𝓬𝓴 𝓽𝓸 𝓢𝓾𝓫𝓼𝓬𝓻𝓲𝓫𝓮 : 🤍 * 𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼: Chole Bhature - 🤍 Amritsari Chole - 🤍 Amritsari Cooker Kulcha - 🤍 * CHOLE PURI Preparation time 10 minutes Cooking time 25-30 minutes Serve 2-4 Ingredients For Masala ¼ cup Ghee, घी 2-3 Green cardamom, हरी इलायची 10-12 Black peppercorns, काली मिर्च के दाने 1 ¼ tsp Cumin seeds, जीरा 5 medium size Onion, slice, प्याज Salt to taste, नमक स्वादअनुसार 2 heaped tsp Coriander powder, धनिया पाउडर 2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर ¼ tsp Asafoetida, हींग ½ tsp Turmeric powder, हल्दी पाउडर ¼ cup Coriander leaves, धनिया पत्ता Little water, पानी 3 medium size Tomato, roughly chopped, टमाटर For Tempering 2-4 tbsp Ghee, घी 2 Green chillies, chopped, हरी मिर्च 1 inch Ginger, chopped, अदरक 2-4 Garlic cloves, chopped, लहसुन 4 cups Black chana, soaked, काला चना ½ tsp Sugar, चीनी Salt to taste, नमक स्वादअनुसार few fresh tender Fenugreek leaves, chopped, छोटी मेथी के पत्ते 1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर A pinch of asafoetida, हींग 1 tsp Black pepper powder, काली मिर्च का पाउडर Prepared Masala, तैयार किया हुआ मसाला 2-4 cups Water, पानी For Dough 1 cup Whole wheat flour, आटा Salt to taste, नमक स्वादअनुसार 1 tsp Ghee, घी Water as required, पानी ½ tsp Ghee, घी Oil for frying, तेल तलने के लिए For Salad 1 medium size Onion, slice, प्याज 1 Medium size Tomato, roughly chopped, टमाटर 2 Green chillies, chopped, (less spicy) हरी मिर्च ½ Lemon juice, नींबू का रस Salt to taste, नमक स्वादअनुसार For Garnish Coriander sprig, धनिया पत्ता Pomegranate pearl, अनार के दाने Process For Masala In a large pot, add ghee once it's hot, add green cardamom, black peppercorns, cumin seeds and let it splutter well. Add onion and saute until light pink in color. Add salt to taste, coriander powder, degi red chilli powder, asafoetida and turmeric powder saute it well. Add coriander leaves, little water and cook for 2-4 minutes. Add tomato and mix everything well. Cook until the tomatoes are softened. Once the ghee is separated from the masala. let the masala come to room temperature. Transfer the masala into the grinder jar and grind it into a smooth paste. Keep it aside for further use. For Tempering In a large pot, add ghee once it's hot, add green chillies, ginger, garlic and saute it well. Add black chana and saute it for a minute. Add sugar, salt to taste and saute it well. Cover it with the lid and cook for 5 minutes. Add fresh fenugreek leaves, degi red chilli powder, a pinch of asafoetida, black pepper powder and saute it well. Add prepared masala and saute on medium flame. Add water and mix it well. Cover it with the lid and cook on medium flame. Mash a few chana as this helps in thickening the gravy. Once it's done switch off the flame and garnish with coriander sprig, pomegranate pearl. Serve hot with puri and salad. For Dough In a parat, add whole wheat flour, salt to taste, ghee, water as required and knead a smooth tight dough. Apply ghee and cover it with a damp cloth and keep it aside for further use. Pinch a small lemon size ball and roll it into a round shape to slightly thick thickness. Heat oil in a kadai, once the oil is medium hot fry the puri Press until the puri puffs up and splash oil to puff up fully. Flip over and fry until it turns golden brown. Remove on an absorbent paper. For Salad In a bowl, add onion, tomato, green chillies, lemon juice, salt to taste and mix well. 𝗖𝗛𝗢𝗟𝗘 𝗕𝗛𝗔𝗧𝗨𝗥𝗘 & 𝗛𝗢𝗠𝗘𝗠𝗔𝗗𝗘 𝗖𝗛𝗢𝗟𝗘 𝗠𝗔𝗦𝗔𝗟𝗔 - All time favourite, now homemade :) * * * * 🍽️𝗔𝗠𝗔𝗭🥘𝗡 𝗦𝗛🍳𝗣 🍽️ RB Store - 🤍 Kitchen Appliances - 🤍 * 𝗖𝗛𝗢𝗟𝗘 𝗕𝗛𝗔𝗧𝗨𝗥𝗘 Preparation time 10-15 minutes Cooking time 25-30 minutes Serving 2 Ingredients 𝗙𝗼𝗿 𝗕𝗵𝗮𝘁𝘂𝗿𝗮 𝗪𝗶𝘁𝗵 𝗬𝗲𝗮𝘀𝘁 1½ cup Refined flour ½ tsp Sugar Salt to taste ½ tsp Oil 5 gms Dry Yeast soaked in water & sugar Water 2 tbsp Semolina, soaked in water 1 tsp Oil 𝗙𝗼𝗿 𝗕𝗵𝗮𝘁𝘂𝗿𝗮 𝗪𝗶𝘁𝗵𝗼𝘂𝘁 𝗬𝗲𝗮𝘀𝘁 1 ½ cup Refined flour 2 tbsp Semolina, soaked in water & sugar ½ tsp Sugar Salt to taste ½ tsp Oil Water as required ¼ cup Curd, beaten ½ tsp Baking soda 1 tsp Oil Oil for frying 𝗙𝗼𝗿 𝗖𝗼𝗼𝗸𝗶𝗻𝗴 𝗖𝗵𝗼𝗹𝗲 1 ½ cups Chickpeas, soaked, overnight 4-5 Dry Amla 1 Dry red chilli 2 Black cardamom, बड़ी इलायची Salt to taste 1 tsp Baking soda 1 Bay leaf, तेजपत्ता 2 tbsp Tea powder Water as required 𝗙𝗼𝗿 𝗖𝗵𝗼𝗹𝗲 𝗠𝗮𝘀𝗮𝗹𝗮 2-4 Black cardamom, बड़ी इलायची 10-12 Black peppercorns, काली मिर्च के दाने 2-3 Green cardamom, हरी इलायची 2 Mace, जावित्री ½ tbsp Dry fenugreek leaves, कसूरी मेथी 1 inch Cinnamon stick, दालचीनी ½ Nutmeg, जायफल 1 Star anise, चकरी फूल 2-4 Cloves, लौंग ¼ tsp Fenugreek seeds, मेथी दाना 1 tbsp Coriander powder, धनिया पाउडर A pinch of asafoetida, हींग ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर ½ tsp Cumin powder, जीरा पाउडर 𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴 𝗖𝗵𝗼𝗹𝗲 ¼ cup Ghee Prepared Chole Masala 5 tbsp Black tamarind water, soaked ½ cup Remaining chole water 1 inch Ginger, julienned 2 tbsp Ghee 𝗙𝗼𝗿 𝗙𝗿𝗶𝗲𝗱 𝗔𝗹𝗼𝗼 2 medium Potatoes, boiled & cubed Oil for frying Salt to taste ½ tsp Degi red chilli powder 1 tsp Dry mango powder 𝗙𝗼𝗿 𝗚𝗮𝗿𝗻𝗶𝘀𝗵 1 medium Onion, slice 2 fresh Green chillies ½ inch Ginger, julienned Green chutney Few fresh Coriander sprig 𝗣𝗿𝗼𝗰𝗲𝘀𝘀 For Bhature With Yeast In a parat, add refined flour, sugar, salt to taste, oil, dry yeast soaked in water, semolina soaked in water for 1 hour and mix to combine everything well. Add water as required & knead into a smooth & soft dough without putting much pressure. Grease the dough with oil, cover & rest for 1 hour. Pinch a ball sized dough and roll into a slightly thick round without cracks, applying oil to prevent it from sticking. Repeat with rest of the dough, cover & rest for 15 mins. Roll out the dough balls into circle or oblong shape, neither too thin nor thick. Heat oil in a deep kadai. When the oil is sufficiently hot, add a bhatura. Press with the spoon to puff up. Splash oil over the bhatura till they puff completely. Flip over & fry the bhatura till golden brown. Drain the bhature into tissue paper to remove excess oil. Fry all bhature the same way. For Bhature Without yeast In a parat, add refined flour, semolina soaked in water, sugar, salt, oil, curd, baking soda and and mix to combine everything well. Add water as required & knead into a smooth & soft dough without putting much pressure. Grease the dough with oil, cover & rest for 1 hour. Pinch a ball sized dough and roll into a slightly thick round without cracks, applying oil to prevent it from sticking. Repeat with rest of the dough, cover & rest for 15 mins. Roll out the dough balls into circle or oblong shape, neither too thin nor thick. Follow the same process as above to make the Bhature. For Pressure Cooking Chole In a pressure cooker, add soaked chickpeas, dry amla, dry red chilli, black cardamom, salt to taste, baking soda, bay leaf, tea powder and water as required. Pressure cook for 5 whistles. If you do not have tea bags, you can use tea decoction instead. Once the pressure releases, open the cooker and discard the tea bags. keep aside. Strain the chole & preserve the chole water for later use. 𝗙𝗼𝗿 𝗖𝗵𝗼𝗹𝗲 𝗠𝗮𝘀𝗮𝗹𝗮 In a bowl, add Black cardamom, Black peppercorns, Green cardamom, Mace, Dry fenugreek leaves, Cinnamon stick, Nutmeg, Star anise, Cloves, Fenugreek seeds. Dry roast in a pan until the spices turn aromatic. Add coriander powder, a pinch of asafoetida, Degi red chilli powder, Cumin powder & dry roast well. Transferinto a grinder jar & grind it finely. Keep it aside for further use. 𝗙𝗼𝗿 𝗧𝗲𝗺𝗽𝗲𝗿𝗶𝗻𝗴 𝗖𝗵𝗼𝗹𝗲 In a kadai, heat ghee, add pressure cooked chole, prepared chole masala, black tamarind water. Mix everything well to make sure the chole doesn't break. Adjust consistency by adding remaining chole water. Simmer for 15-20 minutes on low flame, or until chole absorbs all the flavour. At the end, add ginger & ghee. Garnish with ginger, ghee, green chillies, fried aloo, sliced onion and coriander sprig. Serve hot with fried bhature & green chutney. For Fried Aloo Heat oil in a kadai, add boiled & cubed potatoes, fry until crisp and golden brown. Transfer it to a bowl. Add salt to taste, degi red chilli powder, dry mango powder and toss it well. Murgh Cholay | Chicken with Chickpeas | Chicken Choley | Murgh Choley | Murgh Chana Recipe | Chicken with Chickpeas Curry | Chicken Chikar Cholay | Chole Chicken | Chicken Curry Ingredients for Murgh Cholay: - Chicken, large pieces with bones- 500 gms - Cholay (Chickpeas), soaked in water- 1 cup (around 200 gms) Whole Spices to boil the Chickpeas: - Green Cardamom- 2 - Bay Leaf- 2 - Cloves- 2 Spice Powders: - Turmeric Powder- 1/4 tsp - Red Chilli Powder- 1 tsp - Kashmiri Chilli Powder- 1 tsp - Coriander Powder- 1.5 tsp - Garam Masala Powder- 3/4 tsp Other Ingredients: - Onions, sliced- 2 medium (150 gms) - Ginger, crushed- 1” piece - Garlic, crushed- 5-6 - Fresh tomato purée/paste- 2 medium sized tomatoes (150 gms) - Whisked curd/yogurt- 3 tbsp - Ginger Julienned- 1 tbsp - Green Chillies, sliced- 2 - Kasuri Methi (Fenugreek Leaves)- 1 tbsp - Salt- 1 tsp + 1/2 tsp while boiling the chickpeas - Oil- 3 tbsp Preparation: - Soak the cholay(chickpeas) in water overnight or for around 6-8 hrs. - Boil the chickpeas in a pan or pressure cooker adding all the spices indicated and 1/2 tsp salt. - Once boiled, strain the water and set it aside for use later. Discard the whole spices. You may also use packaged boiled chickpeas. - Slice the onions, peel and crush the ginger & garlic and blend 2 medium tomatoes to a paste. - Whisk 3 tbsp of curd/plain yogurt and set aside. - Dry roast the Kasuri Methi (Fenugreek leaves) and crush it roughly with your hands. - For the garnish, julienne ginger to give you 1 tbsp and slice the green chillies. Process: - Heat oil in a wok and add the sliced onions. Fry on medium heat for around 8-10 mins till light brown. - Add the chicken pieces and fry on medium heat for 2-3 mins. - Now add the crushed ginger and garlic and continue to fry on low heat for 2-3 mins. - Add all the spice powders,1/2 tsp of the garam masala powder, give a mix and then add 1 tsp salt. Give a mix and fry it on medium heat for 3 mins after adding a splash of water. Fry till oil separates. - Add the fresh tomato paste, give a mix and fry on medium heat for 3-4 mins. - Reduce heat to low and add the whisked curd/plain yogurt. Keep cooking on low for 2 mins and then cover & cook on low heat for 7-8 mins. - Now add the boiled chickpeas, give a mix and fry for 2 mins. - Now add 250 ml of the water in which the chickpeas was boiled, give a stir and cover and cook on low heat for 12 mins. - Now add 1/4 tsp Garam masala powder and crushed Kasuri Methi. - Give a stir and garnish with julienned ginger and sliced green chillies. - Serve with Naan or Roti. #murghcholay #chickenwithchickpeas #chickencholay #murghcholey #cholechicken #chickencurry #chickenrecipe #spiceeats #spiceeatsrecipes #spiceeatschicken

Full Written Recipe for Pindi Chole Bhature For bhatura Ingredients: Maida (refined flour) 2 cups Sooji/rava (semolina) 1/4th cup Powdered sugar 1 tbsp Baking powder ½ tbsp Baking soda 1 tsp Salt 1/4th tbsp Curd 1/4th cup Ghee 2 tbsp Water ½ cup + 2 tbsp Oil for frying bhature Method: In a mixing bowl add all the dry ingredients & mix once, further add, curd, ghee & mix well, next, slowly add the water & knead well to make a soft & stretchy dough. At first you may find that your dough is too sticky, but don’t worry just knead it well for at least 10-15 minutes, as & when you’ll knead the dough, it will become soft & smooth. Apply little ghee over the dough, cover it with a damp cloth & rest it for minimum 1 hour in a warm place, ideal place can be switched off oven or any warm place in the kitchen, by the time you can start making the special pindi chole masala. Once the dough resting is done, briefly knead the dough again & shape the dough into equal size dough balls, to ensure the perfect bhaturas, rest the dough balls for 10 minutes. Flatten it with h&s & further roll it in round or oblong shape, drizzle oil if it sticks to the surface. Set oil in kadhai for deep frying the bhaturas on high flame, wait until the oil is smoking hot, slide the bhature in smoking hot oil & gently push the bhatura inside the oil with the spatula, this will allow the bhature to fluff immediately, flip & carefully splash hot oil with the spatula so the puri starts to fluff evenly & quickly, this will give a nice golden colour as well, fry the bhature until it golden brown & are fluffy as balloon. Your bhaturas are ready, serve them hot with hot pindi chole. For special pindi chole chana masala Ingredients: Whole spices: Jeera 2 tbsp Coriander seeds 3 tbsp Black peppercorns 1 tbsp Cloves 5 nos. Bay leaves 3 nos. Cinnamon stick 2 inch Chakri phool 1 no. Black cardamom 3 nos. Green cardamom 5-6 nos. Mace 1 no. Whole dry red chillies 4-5 nos. Powdered spices: Kasuri methi 1 tbsp Methi seeds 1/4th tsp Anardana powder 3 tbsp Amchur powder 1 tbsp Red chilli powder 1 tbsp Black salt 2 tsp For pindi chole Ingredients: Raw Chickpea 2 cups For potli masala: Black tea powder 2 tbsp Black peppercorns 5-6 nos. Cloves 3-4 nos. Cinnamon stick 1 inch Bay leaf 1 no. Green cardamom 3 no. Black cardamom 1 no. Salt to taste Baking soda ½ tsp Water as required for cooking chole Hing 1 tsp Green chillies 4-5nos. (slit) Ginger 1/4th cup (juliennes) Special pindi chole masala 4 tbsp Salt to taste Ghee 1.5 cups Garnish: chopped coriander leaves, ginger juliennes Methods: Wash the raw chickpea & soak it overnight or minimum for 6-8 hour. Drain the water & wash the chickpea thoroughly with fresh water. For potli masala, take a muslin cloth & add, black tea powder & the whole spices, tie it to make it like a potli. IN a pressure cooker add the chole, masala potli, add salt to taste, baking soda & masala potli & mix well, close the lid & pressure cook on medium flame for 3-4 whistles. Allow the pressure cooker to depressurize naturally, & then open the lid. Strain the chole from the water, using a sieve, keep the water as its full of flavour & it’ll be needed in further cooking process. Remove & discard the tea & masala potli. Transfer the cooked chole to a separate wok, I’ve used iron wok to give the chole its dark colour, you can use other wok as well if in case you don’t have iron wok. Make sure the wok is not on the gas stove. Further add hing, slit green chillies, ginger, special pindi chole masala & salt to taste, mix gently & keep it aside for half an hour. Heat 1.5 cup ghee in a separate pan until its smoking hot, further remove 3-4 tbsp of ghee separately to add in khatte wale aloo, & add the remaining smoking hot ghee to the masala coated chana & mix gently for 2-3 minutes. Put the wok on gas stove & turn on the heat to low flame, further, add the flavoured chole reserve water to the chole in batches, & cook the chole by mixing it gently. Make sure you don’t add too much, as we need the chole to be semi thick, it’s the ideal substitute for water as its full of flavour, colour & protein. Further cook it for 15-20 minutes, add more of ginger juliennes & fresh coriander, but if you would like that intense dark colour, cook it for more longer in iron wok until you get your desired colour, do not cook for more than 35-40 minutes or the chole will turn too mushy. Check for the seasoning & add salt as required. For khatte chatpate aloo Ingredients: Raw Potatoes 4-5 medium size (cube) Oil for frying Salt to taste Pindi Chana masala 1 tbsp Coriander powder 1 tbsp Red chilli powder 2 tsp Amchur powder 1 tsp Anardana powder 1 tsp Black salt 1 tsp Hing (asafoetida) 1/4th tsp Smoking hot ghee 3-4 tbsp For khatti chole bhature wali chutney: Ingredients: Pudina 1 big bunch Hara dhaniya a h&ful Hari mirch 3-4 nos. Adrak 1 inch Anardana powder 1 tsp Black salt ½ tsp Amchur powder 1 tsp Jeera powder ½ tsp Salt to taste Imli 2 tsp Ice cubes 1-2 nos.

The Masale Wale Aloo Is Ready For Instant Achaar Heat Mustard Oil In A Pan, Add Yellow Mustard Seeds And Allow It To Crackle Reduce The Flame And Add All The Spices And Vinegar. Kathiawari Choley Recipe in English: Ingredients: -Pani (Water) 2-3 Cups -Choley (Chick peas) boiled 3 Cups -Haldee powder (Turmeric powder) ½ tsp -Namak (Salt) 1 tsp or to taste -Lal mirch powder (Red chili powder) 1 tsp -Lal mirch (Red chili) crushed 1 tsp -Cheeni (Sugar) 1 tbs -Imli ka gooda (Tamarind pulp) 3 tbs -Tomato ketchup 3 tbs -Pani (Water) ¼ Cup -Corn flour 2 tbs -Aloo (Potatoes) boiled & cubes 1 Cup -Tamatar (Tomato) deseeded & chopped 1 Cup -Hari mirch (Green chilies) chopped 3 -Pyaz (Onion) slices 1 medium -Hara dhania (Coriander) 2-3 tbs -Chaat masala 1 tsp -Papri Directions: -In pot,add water and bring it to boil,add chick peas,turmeric powder,salt,red chili powder,red chili crushed and mix well. -Add sugar,tamarind pulp,tomato ketchup and mix well. -Dissolve corn flour in water and gradually add corn flour+water in a pot and mix well. -Add potato and mix,cover and cook for 2-3 minutes. -Add tomatoes,green chilies,onion and mix well. -Add coriander,chaat masala and mix. -Garnish with onion,coriander,papri and serve. Keep it aside for further use. For Cooking Chole In a pressure cooker, add bay leaf, cloves, ghee, chicken bones and saute for a while. Add chickpeas, salt to taste, water as required and pressure cook for 4-5 whistles. Keep it aside for further use. For Masala In a pan, add bay leaf, cinnamon stick, black peppercorns, black cardamom, green cardamom, coriander seeds, mace, salt to taste and dry roast it well. Transfer it into a grinder jar and grind into a fine powder. Keep it aside for further use. For Chole Murgh In a pan, add ghee or oil, green cardamom, cloves, cinnamon stick, bay leaf, onions and saute until golden in color. Meanwhile strain the cooked chole and keep it aside. Add marinated chicken, coriander powder, turmeric powder, degi red chili powder and let the masala cook well. Add fresh tomato puree, curd, cooked chole, chole stock and let it cook for a while. Add tender coriander stems, ginger juliennes, fresh coriander leaves and slow cook on medium flame for 15-20 mins or until chicken is tender. Transfer it to a serving dish, garnish it with coriander sprig, ginger juliennes and green chillies. Try out this yummy and tempting recipe of Punjabi Murgh Cholay, either serve with naan or chapati 🫓 Also let me know how you like it. ❤️ Punjabi Murgh Cholay | Chicken Choley | Chicken & Chickpeas Curry | Murgh Cholay | Hafsa Minhaj Ingredients: ✔️ For boiling/ pressure cook chickpeas: -Chickpeas soaked in water 2 & 1/2 cups or around 500 gms (1/2 kg) -Bay leaves 2 -Cloves 4 -Green cardamoms 3 -Water 3-4 cups ✔️ For chicken gravy: -Oil 1/2 cup -Onions 4 medium (300 gms) -Chicken 1 kg (I have taken all the wings) -Ginger garlic paste 1 tbsp -Coriander powder 1 tbsp -Chicken powder 2 tsp -All spice powder (garam masala powder) 1 & 1/2 tsp -Red chilli powder 2 tsp -Paprika powder 2 tsp -Salt 2 tsp -Turmeric powder 1/2 tsp -Yogurt 6 tbsp -Fresh tomatoes purée 4 medium sized or 300 gms -Boiled chickpeas -Water 500 ml or 2 & 1/2 cups (Lukewarm) -Dry roasted fenugreek leaves 2 tbsp -Coriander leaves 3-4 tbsp -Green chillis thick 4-5 -Ginger julienne cut 1 inch piece Subscribe to my #youtube channel, do share and like my videos, hit the bell icon too. chickpea curry needs no introduction. People will most commonly know this curry as chana masala, but in my family, we refer to chickpeas as chole. Regardless of what you choose to call this classic curry, you will definitely love my recipe for it. This chickpea curry is a wonderful comfort food and one of my favourite curries out there. It’s a hearty and saucy chickpea dish with a dash of warming spices. it's really very delicious and tasty and yes very healthy you can take it for breakfast and lunch and dinner as well #zarwantourtaste
